POTATO DOUGH FLAKE SOUP

INGREDIENTS :

15 dried medium-sized anchovies, 2 cloves of garlic, 1 red potato (medium), 1 zucchini, 1 stalk of spring onion, 1 egg, 6. 5 cups of water.

SEASONINGS:
(1) 2 cups of all-purpose flour.
(2) 1/4t salt.

PREPARATION :

1. Rinse anchovies and drain.
2. Pour 6 cups of water to a pot; Add the anchovies; Bring to the boil over a high heat; Turn to a medium heat; Cook over a medium heat for 10 minutes; Turn off the heat; Strain through a stainless steel sieve; Discard the anchovies.
3. Pour seasoning (1) to a bowl; Gradually stir in 1/4 cup of water; Stir till well mixed; Knead into smooth dough; Wrap with cling film tightly; Chill in the fridge for 1 hour.
4. Peel, rinse and cut a red potato into pieces.
5. Rinse and cut off the roots of spring onion; Cut into slices diagonally.
6. Rinse zucchini; Scratch off any hair; Rinse and drain; Cut off both ends; Cut into pieces.
7. Break an egg; Whisk till well blended.
8. Take the dough out of the fridge; Discard the cling film.
9. Return the anchovy broth from the step 2 to the pot; Bring to the boil over a high heat; Turn to a low heat; Add the garlic and the potato; Cook over a low heat for 3 minutes; Add the zucchini; Cook over a low heat.
10. Rip the dough into flat piece and add to the soup from the step 9 (repeat the step till the dough is used up).
11. Bring the soup to the boil over a high heat again; Turn to a medium-low heat; Cook over a medium-low heat till the dough is floating and slightly translucent; Turn to a low heat; Add the egg solution; Add most of the spring onion and seasoning (2); Turn off the heat; Arrange in serving bowls; Garnish with the remaining spring onion; Serve immediately.
