GNOCCHI KIMCHI SOUP

INGREDIENTS :

18 dried medium-sized anchovies, 70g beef tenderloin, 70g white cabbage kimchi, 60g onion, 1 potato, 1 zucchini, 3 stems of spring onion, 1 egg, 1t sesame oil, 1T oil, 7 cups of water.


SEASONINGS:
(1) 1t sesame oil, 1t chonju (i.e. rice wine), 1t citron honey.
(2) 1/3t chicken bouillon powder, 1.5 cup of all-purpose flour, 1T soy bean powder.
(3) 135ml water.
(4) 1.5T soy sauce, 1/5t salt, some ground white pepper.

PREPARATION :

1. Rinse anchovies and drain.
2. Pour 7 cups of water to a pot; Add the anchovies; Bring to the boil over a high heat; Turn to a medium heat; Cook over a medium heat for 10 minutes; Turn off the heat; Strain through a stainless steel sieve; Discard the anchovies; Cool at the room temperature.
3. Wipe-clean beef tenderloin; Cut into shreds across to the grain; Marinate in seasoning (1) for at least 60 minutes.
4. Add seasoning (2) to a big mixing bowl; Gradually stir in seasoning (3); Add 1T oil; Stir till well mixed; Knead into smooth dough; Cover the dough with a piece of clean cloth and leave it for 50 minutes.
5. Peel, rinse and cut potato into quarter-rounds; Blanch in boiling water for 30 seconds; Lift the potato up immediately; Drain.
6. Cut off the stems of spring onion; Rinse and drain; Cut into sections with 3cm length.
7. Peel, rinse and cut zucchini into quarter-rounds.
8. Peel, rinse and julienne onion.
9. Peel, rinse and mince garlic.
10. Julienne white cabbage kimchi.
11. Beat an egg to a bowl; Whisk till well blended.
12. Roll the dough from the step 4 into cylinder shape.
13. Add 1t sesame oil to a non-stick pot; Heat over a medium heat; Add the beef, the onion and the white cabbage kimchi; Stir-fry over a low heat for 2 minutes; Pour 6 cup of the anchovy broth from the step 2 into the pot; Bring to the boil over a high heat; Turn to a low heat; Skim off any foams; Add the potato and the zucchini; Cook over a low heat till the potato is done; Tear pieces with roughly 2cm length off from the dough from the step 12, press with your thumb to flatten a bit to be gnocchi and then add to the pot; Add seasoning (4) and the garlic; Cook over a low heat till the gnocchi floating on the soup; Stir in the egg solution; Add the spring onion; Turn off the heat; Serve immediately.
