ABALONE CHICKEN SOUP

INGREDIENTS :

1 chicken, 6 abalones, 1 stalk of spring onion, 1 bunch of radish greens, 130g white cabbage, 12g ginger, 3T salt.


SEASONINGS:
(1) 1t chicken bouillon powder, 1t salt, 1t ground white pepper, 2T chonju (i.e. rice wine).
(2) 4 cups of water, 3 cups of chicken broth.

PREPARATION :

1. Discard the hair of chicken; Discard the innards; Rinse in running water; Pat dry; Rub the chicken with seasoning (1); Leave it for 45 minutes.
2. Brush-clean abalones, including the shells; Wash in water with heavy salt throughly; Drain.
3. Cut off the heads of white cabbage; Soak in water for 20 minutes; Lift the white cabbage up; Rinse and drain.
4. Rinse spring onion; Cut off the roots; Cut into sections.
5. Peel, rinse and julienne ginger.
6. Soak radish greens in water for 20 minutes; Lift the radish greens up; Rinse and drain.
7. Arrange the white cabbage, most of the radish greens, and most of the spring onion at the bottom of a non-stick heavy pot.
8. Pour seasonings to a pot; Bring to the boil over a high heat; Turn to a low heat; Add the abalones and ginger; Bring to the boil over a high heat again; Turn to a medium heat for 3 minutes; Turn to a low heat; Lift the abalones up and set aside; Cover the pot with its lid; Cook over a low heat till ready to use.
9. Cut off the chicken head and discard; Cut the chicken into halves along the length by making a cut along the chest bone and then the backbone; Cut off the legs and the wings, and set aside; Chop the remaining two halves into quarters along the length; Cut each quarter into pieces; Make a cut at the joint between the thigh and the drumstick; Cut the thighs and the drumsticks into halves; Separate the winglet, mid-joins and the drummers by cutting at the joints; Arrange on the top of the vegetable in the pot from the step 7.
10. Pour the soup from the step 8 over the chicken; Bring to the boil over a high heat; Turn to a medium heat; Cover the pot with its lid; Cook over a medium heat till the chicken is medium well (roughly for 9 minutes); Turn to a low heat; Uncover; Arrange the abalones in the pot; Cook over a low heat till the abalone is well done; Turn off the heat; Garnish with the remaining spring onion and radish greens; Serve hot.
