KIMCHI PANCAKES

INGREDIENTS :

90g pork, 1.5 cups of cold water, 1 egg, 1 cup of baechu kimchi, 1 stalk of spring onion, 120ml oil.


SEASONINGS:
(1) 1t Chonju (i.e. rice wine), some ground white pepper, 1/2t soy sauce.
(2) 1 cup of all-purpose flour, 1/2 cup of rice flour.
(3) 1/2t salt.

PREPARATION :

1. Rinse pork; Trim off the fat; Chop; Marinate in seasoning (1) for at least 30 minutes.
2. Rinse and cut off the roots of spring onion; Cut into sections.
3. Beat an egg to a bowl; Whisk.
4. Chop baechu kimchi.
5. Add seasoning (2) to a mixing bowl; Gradually stir in 1.5 cup of cold water; Stir to mix well; Add the egg solution; Stir to mix well; Add the pork and the spring onion; Stir to mix well; Add seasoning (3); Stir to mix well.
6. Add 1T oil to a non-stick pan; Swirl the pan around to evenly coat; Heat over a high heat; Turn to a low heat; Ladle the batter from the step 5 into the pan; Spread it out to a circle; Pan-fry over a low heat till crispy (roughly 5 minutes); Flip over; Pan-fry over a low heat for 5 minutes; Lift the pancake up and rest on kitchen paper (repeat the step till the ingredients are used up).
7. Cut the pancakes into wedges; Arrange on serving plates; Serve hot.
