RED BEAN RICE

INGREDIENTS :

1/2 cup red beans, 2 cups of korean short-grain rice, 1 piece of kelp, 600ml water.

PREPARATION :

1. Rinse red beans briefly; Soak in cold water for 24 hours.
2. Wipe kelp with damp kitchen paper.
3. Pour 300ml water to a pot; Bring to the boil over a high heat; Turn to a low heat; Add the kelp; Bring to the boil over a high heat again; Turn to a medium heat; Cook over a medium heat for 30 minutes; Turn off the heat; Cool at the room temperature; Strain the broth through a sieve.
4. Wash rice under cold running water till the water through it is completely clear; Leave in the strainer to drain for 60 minutes;
5. Lift the red beans up and drain.
6. Add the rice and red beans to a rice cooker; Pour 300ml water to the rice cooker; Add 240ml kelp broth from the step 3 to the cooker; Stir briefly with the rice spatula; Follow the directions of your rice cooker; Serve hot.
