BLACK SESAME PORRIDGE

INGREDIENTS :

1 cup of Korean short-grain rice, 1 cup of black sesame seeds, 1 cup of pine nuts, 4 cups of water, some honey.


SEASONINGS:
1/2t salt.

PREPARATION :

1. Wash Korean short-grain rice under cold running water till the water through it is completely clear; Soak in water for 3 hours; Lift the rice up; Rinse; Leave in the strainer to drain for 60 minutes.
2. Heat a non-stick skillet over a high heat; Add black sesame seeds; Stir-fry over a high heat till dry; Turn to a medium heat; Stir-fry till golden and fragrant with a crackling sound (around 20 minutes); Turn off the heat.
3. Heat a non-stick skillet over a high heat; Add pine nuts; Stir-fry over a high heat till dry; Turn to a medium heat; Stir-fry till golden and fragrant with a crackling sound (around 7 minutes); Turn off the heat.
4. Transfer the rice to a food processor; Pour 1 cup of water into the processor; Add seasonings; Grind; Add the black sesame seeds; Process into chunky paste.
5. Transfer the chunky paste from the step 4 to a non-stick pan; Gradually stir in 3 cups of water; Cook over a medium heat for 20 minutes (Stir occasionally and break up any lumps); Turn to a low heat; Cook over a low heat for 15 minutes (Stir every 3 minutes); Turn off the heat; Arrange in serving bowls; Garnish with the toasted pine nuts; Drizzle with some honey; Serve warm.
