SWEET RICE DRINK

INGREDIENTS :

454g coarse malt flour, 1 cup of korean short-grain rice, 1 cup of caster sugar, 9g ginger, 4.02L water.

PREPARATION :

1. Pour 3.84L water into a big mixing bowl; Add malt flour; Stir till well mixed; Cover the bowl with a damp clean cloth; Leave it for 24 hours.
2. Peel, rinse and slice ginger.
3. Wash rice under cold running water till the water through it is completely clear; Leave in the strainer to drain for 60 minutes;
4. Strain the malt flour mix from the step 1 through a fine-mesh strainer; Discard the malt flour.
5. Add the rice from the step 3 to a rice cooker; Pour 180ml water into the cooker; Follow the directions of your particular rice cooker; Carefully add the malt water from the step 4; Add 2T sugar; Stir till dissolved; Leave it in the rice cooker in warm status for 5 hours.
6. Transfer the rice mixture from the step 5 to a large pot; Add the ginger and the remaining sugar; Stir over a low heat till the sugar is dissolved; Bring to the boil over a high heat; Turn to a low heat; Cook over a low heat for 8 minutes; Turn off the heat; Cool at the room temperature; Keep in the fridge for a few hours; Discard the ginger slices; Arrange in serving bowls.
