SWEET RICE BALLS

INGREDIENTS :

1.5 cups of sweet rice flour, 1t salt, 1 cup of toasted soybean powder, ½ cup of hot water, 3.785L water.

PREPARATION :

1. Strain sweet rice flour through a sieve to a big mixing bowl; Add 1t salt; Stir well; Gradually stir in ½ cup of hot water; Stir till well mixed; Knead into dough; Divide into 24 portions.
2. Roll a portion of dough into ball.
3. Pour 3.785L water into a pot; Bring to the boil over a high heat; Add the rice ball one by one; Cook over a high heat till floating on the top and being slightly translucent (about 7 minutes); Lift the rice balls up immediately; Soak in the ice water for a minute; Lift the rice balls up and cool.
4. Pour toasted soybean powder into a flat shallow plate; Roll each rice ball over the powder so that it is evenly coated; Arrange in serving plates.
