SOYBEAN POWDERED RICE CAKES

INGREDIENTS :

5 cups of glutinous rice, 1 cup of toasted soybean powder (i.e. kohng galu), 6 cups of lukewarm water, 1 cup of cold water.


SEASONINGS:
1T salt, 1T sugar.

PREPARATION :

1. Wash glutinous rice under cold running water till the water through it is completely clear; Soak in 6 cups of lukewarm water for 60 minutes; Drain in colander.
2. Add seasonings into a mixing bowl; Gradually stir in 1 cup of cold water; Stir till dissolved.
3. Arrange clean cloth at the bottom of a steamer; Arrange the rice in the steamer evenly; Steam over a medium heat for 30 minutes; Sprinkle with the solution from the step 1 over the rice; Steam over a medium heat for 15 more minutes; Turn off the heat.
4. Transfer the hot rice to a cutting board; Pound the rice into dough with a mallet; Flatten the dough to 1cm thickness; Slice into rectangles.
5. Pour toasted soybean powder into a flat shallow plate; Dust the rice cakes in the powder to evenly coat; Arrange on serving plates.
