POACHED PEAR

INGREDIENTS :

3 pears, 10 cups of water, 16g ginger, 1 lemon,


SEASONINGS:
6 cloves, 1T whole black pepper corns, 1T grain syrup.

PREPARATION :

1. Peel, rinse and slice ginger.
2. Rinse a lemon; Peel for zest.
3. Pour 10 cups of water to a pot; Bring to the boil over a high heat; Add the ginger; Bring to the boil over a high heat again; Add the lemon zest; Bring to the boil over a high heat again; Turn to a low heat; Cook over a low heat for 30 minutes; Turn off the heat; Strain through a sieve; Discard the ginger and the lemon zest.
4. Peel pears; Rinse and drain.
5. Pour the ginger soup from the step 2 to a pot; Add the pears and seasonings; Bring to the boil over a high heat; Turn to a low heat; Cook over a low heat for 20 minutes; Turn off the heat; Arrange the pears on serving plates; Serve warm.
