OSMANTHUS RICE BALLS

INGREDIENTS :

120g shelled green bean, 135g whole milk, 5g lard, 1/2 cup of cornstarch.


SEASONINGS:
(1) 15g all-purpose flour, 30g glutinous rice flour, 30g rice flour, 2T lard.
(2) 30g grain syrup, some dried osmanthus.
(3) 150g water, 1T grain syrup.
(4) 2T honey, 1/2t dried osmanthus.

PREPARATION :

1. Rinse shelled green beans; Soak in water for 24 hours; Lift the beans up; Rinse and drain.
2. Add seasoning (1) to a big mixing bowl; Mix well; Keep on stirring while gradually adding whole milk; Add seasoning (2); Mix well; Transfer the mixture to a steaming plate.
3. Arrange a steaming rack in a deep heavy-based pan; Pour water into the pan till 1/4 height of the steaming plate; Bring to the boil over a high heat; Turn to a low heat; Arrange the steaming plate with the flour mixture on the rack; Cover the pan with its lid; Turn to a high heat; Steam over a high heat for 10 minutes; Remove; Turn off the heat.
4. Lay a piece of cling film on the cutting board; Carefully transfer the solid mixture to the cling film; Wrap the mixture; Knead into smooth dough; Cool at the room temperature; Chill in the fridge for 2 hours.
5. Add seasoning (3) and the green beans to a blender; Blend into puree; Transfer to a non-stick pan; Add 5g lard; Cook over a medium heat till thickened; Turn off the heat; Add seasoning (4); Mix well to be the filling; Cool at the room temperature; Transfer the filling to a sealed container; Chill in the fridge for 30 minutes.
6. Evenly spread some cornstarch over the counter and a rolling pin; Evenly Spread some cornstarch over the interior of another sealed container.
7. Take the dough from the step 4 out of the fridge; Unwrap; Sprinkle your hands with some cornstarch; Divide the dough from the step 4 into 8 equal portions; Flatten each portion of the dough with the rolling pin; Wrap some filling from the step 5 with each; Arrange in the container with cornstarch from the step 6; Chill in the fridge for 30 minutes before serving.
