FLOWER RICE CAKES

INGREDIENTS :

2 cups of sweet rice flour, 1 cup of water, 23 chrysanthemum, 1T oil, some salt.


SEASONINGS:
1/8t salt.

PREPARATION :

1. Soak chrysanthemum in water with some salt for about 15 minutes; Lift the chrysanthemum up; Drain; Carefully cut the petals from the stems.
2. Add sweet rice flour and seasonings to a big mixing bowl; Gradually stir in 1 cup of water; Stir till well mixed; Knead into smooth dough; Divide into 23 equal portions.
3. Roll a portion of dough into a ball; Flatten into a rice cake with approximately 6mm thickness (repeat the step till the ingredients are used up).
4. Add 1T oil to a non-stick pan; Swirl the pan around to evenly coat it with oil; Heat over a high heat; Turn to a low heat; Arrange the rice cake from the step 3 into the pan, leaving space between each rice cake; Pan-fry over a low heat for 4 minutes; Flip them over; Cook over a low heat for 3 minutes; Press the chrysanthemum petals into the top of each rice cake; Turn off the heat; Arrange on serving plates.
