DEEP-FRIED KELP

INGREDIENTS :

1 sheet of kelp (large), 3 cups of oil, 1T muscovado.

PREPARATION :

1. Wipe-clean kelp with damp kitchen paper; Cut into pieces.
2. Pour 3 cups of oil to a heavy-based skillet; Bring to the boil over a high heat; Turn to a medium heat; Carefully add the kelp piece by piece; Deep-fry over a medium heat till bubbles appear on the surface; Turn over; Deep-fry over a medium heat till bubbles appear on the surface; Turn to a high heat; Deep-fry over a high heat for 10 seconds; Lift the kelp up and lay on kitchen paper; Evenly sprinkle with muscovado; Turn off the heat.
3. Arrange the kelp on serving plates; Serve warm.
