CITRON GLAZED SWEET POTATO

INGREDIENTS :

2 sweet potato (large), 6 lemons, 9 tangerine, some coriander, 1L water.


SEASONINGS:
2.5T citron honey.

PREPARATION :

1. Peel, rinse and cut off both ends of sweet potatoes; Cut into sticks; Soak in cold water till ready to use.
2. Rinse lemons; Cut into halves; Discard the seeds; Juice.
3. Peel tangerines; Discard the seeds; Add to a food processor; Blend till smooth.
4. Pour 1L water to a pot; Bring to the boil over a high heat; Turn to a low heat; Add the tangerine puree and the lemon juice; Stir over a low heat till well mixed; Add the sweet potato; Bring to the boil over a high heat again; Turn to a low heat; Cook over a low heat for 5 minutes; Cover the pot with its lid; Turn off the heat; Leave it for 20 minutes.
5. Rinse coriander; Discard the stems; Chop finely.
6. Add 6T of the cooking sauce from the step 4 to a bowl; Add seasonings; Stir till well mixed.
7. Lift the sweet potatoes from the step 4 up and arrange on serving plates; Drizzle with the honey sauce from the step 6; Garnish with the coriander.
