BITTER GOURD SWEET ROLLS

INGREDIENTS :

180g bitter gourd, 200ml lukewarm water, 3t oil, some icing.


SEASONINGS:
(1) 85g grain syrup, 200ml water.
(2) 80g agar powder, 10g sweet rice flour, 1t salt.

PREPARATION :

1. Rinse bitter gourd; Cut into halves; Discard the seed; Chop.
2. Add seasoning (1) to a pot; Stir over a low heat till well mixed; Add the bitter gourd; Bring to the boil over a high heat; Turn to a low heat; Cook over a low heat for 15 minutes; Turn off the heat; Transfer to a blender; Blend into puree.
3. Add seasoning (2) to a mixing bowl; Gradually stir in 200ml lukewarm water; Stir till well mixed; Strain through a fine sieve; Gradually stir in the bitter gourd puree; Stir till well mixed; Pour into a greased steaming plate.
4. Arrange a steaming rack in a deep heavy-based skillet; Pour water into the skillet till 1/4 height of the steaming plate; Bring to the boil over a high heat; Arrange the steaming plate from the step 3 on the rack; Cover the skillet; Steam over a high heat for 3 minutes; Turn off the heat; Set the bitter gourd sweet cake aside to cool a bit; Roll; Cut into slices; Arrange on serving plates; Sprinkle with some icing.
