PORK FILLET KIMCHI WRAPS

INGREDIENTS :

530g pork fillet, 160g white cabbage kimchi, 300g lettuce, 2 cloves of garlic, 10g ginger, 1 stem of Peking scallion, 70g onion, 3T sesame seed, 3 cups of water.


SEASONINGS:
(1) 1t salt, 1t chonju wine (i.e. rice wine), 1t soy sauce, 1t sesame oil.
(2) 1/3t black pepper corns 1/2T salt, 2T chonju wine, 1T soy sauce.
(3) 1T sesame oil.
(4) 1/3t salt. 1T sesame oil, some ground white pepper.

PREPARATION :

1. Rinse pork fillet and drain; Cut into pieces; Marinate in seasoning (1) till ready to use.
2. Peel, rinse and slice ginger.
3. Peel, rinse and slice garlic.
4. Cut off the roots of Peking scallion; Cut into slice with 5mm thickness.
5. Add 3T sesame seeds to a grinder; Grind.
6. Cut white cabbage kimchi into shreds; Transfer to a bowl; Add seasoning (2) and half of the sesame seeds from the step 5; Gently stir till well mixed.
7. Cut off the stems of lettuce; Separate a leaf by leaf; Soak in water with some salt for 20 minutes; Lift the lettuce up; Drain.
8. Peel, rinse and julienne onion; Soak in cold water for 15 minutes; Lift the onion up; Drain.
9. Add seasoning (3) and the remaining sesame seeds from the step 5 to a bowl; Stir till well mixed; Add the onion; Stir till well mixed.
10. Pour 3 cups of water to a pot; Add the ginger, the garlic and the Peking scallion; Bring to the boil over a high heat; Turn to a low heat; Add the pork fillet and seasoning (1); Bring to the boil over a high heat again; Turn to a low heat; Cook over a low heat for 1hour (keep on skimming off the foams); Lift the pork fillet from the step 8 up; Turn off the heat.
11. Lay a piece of lettuce flat; Arrange a piece of the pork fillet from the step 10 on the top of the lettuce; Put the cabbage kimchi and the onion on the top of the pork fillet (repeat the step till ingredients are used up).
