GRILLED PORK RINDS

INGREDIENTS :

600g pork rinds, 1T oil, 1/2 cup of soybean powder.


SEASONINGS:
1T Korean bbq sauce, 2 tsp chongju, 1 tsp sesame oil, 1 tsp ground white pepper.

PREPARATION :

1. Rinse pork rinds in cool water, removing any hair; Pat dry with paper towels.
2. Fill a pot with water; Bring to the boil over a high heat; Carefully arrange the pork rinds in the pot; Bring to the boil over a high heat again; Turn to a low heat; Simmer over a low heat for 1 hour
(skim off any bubbles and floating substance regularly during the simmering process); Drain; Cool at the room temperature for a while.
3. Transfer the pork rinds in a pan; Cover the pan with cling wrap; Chill in the fridge for 7 hours to solidify the layer of fat beneath the skin.
4. Take the pork rinds out of the fridge; Remove the cling wrap; Cut off the fat from each skin piece with a knife and scrape off any fat with spoon like tool; Punch holes all over the pork rinds with toothpick; Cut into large pieces; Return the pork rinds in the pan; Add seasonings; Cover the pan with cling wrap; Chill in the fridge for 3 hours.
5. Pre-heat broiler to its maximum heat.
6. Take the pork rinds out of the fridge; Discard the cling wrap; Arrange the pork rinds on the broiler; Grill over a high heat for 2 minutes (flip every 1 minute); Set the pork rinds aside; Cut into smaller pieces with a pair of kitchen scissors; Return the pork rinds to the broiler; Grill over a high heat for another 3 minutes (flip every 1 minute); Arrange on serving plates; Serve with soy bean powder on the side.
