GINGER PORK RIBS

INGREDIENTS :

1.4kg meaty pork ribs, 380g potatoes, 4 carrots, 260g pearl onions, 1 stalk of spring onion, 2 cloves of garlic, 70g ginger, some black pepper corns, 2.5 cups of water, 25ml water.


SEASONINGS:
(1) 102ml soy sauce, 51ml grain syrup, 26ml chonju (i.e. rice wine).
(2) 1/2 cup of chonju, 1/4t ground black pepper.

PREPARATION :

1. Peel and rinse and slice garlic.
2. Peel, rinse and slice ginger.
3. Add black pepper corns to a mortar and pestle; Crush.
4. Pour 25ml water to a saucepan; Add the black pepper corns, the garlic and 70% of the ginger; Bring to the boil over a high heat; Turn to a low heat; Cook over a low heat for 10 minutes; Add seasonings; Stir till well mixed; Turn to a high heat; Cook over a high heat for 2 minutes; Turn off the heat; Cool at the room temperature; Strain the sauce through a sieve into a big mixing bowl.
5. Cut off the roots of spring onion; Rinse and drain; Chop finely.
6. Add seasoning (2), the spring onion and the ginger to the mixing bowl from the step 4; Stir till well mixed.
7. Rinse pork ribs and drain; Cut into pieces; Transfer to a bowl; Fill the pot with cold water to cover the ribs; Leave it for 20 minutes to remove excess blood; Drain.
8. Add the pork ribs to a pot; Pour 2.5 cups of water to the pot; Add the sauce from the step 6; Cover the pot with its lid; Bring to the boil over a high heat; Turn to a low heat; Cook over a low heat for 30 minutes.
9. Peel, rinse and cut potatoes into cubes.
10. Peel, rinse and cut off both ends of carrots; Cut into pieces.
11. Peel, rinse and drain pearl onions.
12. Remove the lid of the pot with the pork ribs from the step 8; Add the potatoes, the carrots and the pearl onions to the pot; Cover the pot with its lid again; Cook over a low heat for 13 minutes; Uncover; Lift the pork ribs and the vegetables up and arrange in serving plates; Skim off any oil on the surface of the sauce; Turn to a medium heat; Cook over a medium heat till the sauce has thickened; Turn off the heat; Pour the sauce over the ribs and vegetables; Serve hot.
