CRISPY KIMCHI PORK ROLLS

INGREDIENTS :

170g pork tenderloin, 70g white cabbage kimchi,150g zucchini, 1 yellow bell pepper, 1 egg, 4 stems of spring onion, 9g ginger, 4 cups of oil.


SEASONINGS:
(1) 1t sesame oil, 1t salt, some ground black pepper, 1t chonju (i.e. rice wine).
(2) 1 cup of all-purpose flour.
(3) 1t Korean hot red pepper paste, 1/2T rice vinegar, 1T honey, 1t ground sesame seeds.
(4) 1 cup of cake flour.

PREPARATION :

1. Drain white cabbage kimchi.
2. Peel, rinse and mince ginger.
3. Cut off the roots of spring onion; Rinse and drain; Chop finely.
4. Rinse pork tenderloin and drain; Cut into long thin slices; Marinate in seasoning (1) with the ginger and the spring onion for at least 60 minutes.
5. Rinse a yellow bell pepper and drain; Cut off the stem; Cut into halves; Discard the seeds; Julienne.
6. Peel, rinse and cut off both ends of zucchini; Julienne.
7. Squeeze out any excess water of the white cabbage kimchi from the step 1; Julienne.
8. Pour seasoning (2) to a flat shallow plate.
9. Dust each side of a piece of the pork tenderloin in the seasoning (2); Lay flat; Arrange the zucchini, the yellow bell pepper and the white cabbage kimchi on it; Roll (repeat the step till the ingredients are used up).
10. Add seasoning (3) to a bowl; Stir till well mixed.
11. Beat an egg to a bowl; Whisk till well blended.
12. Pour seasoning (4) to a flat shallow plate.
13. Pour 4 cups of oil to a deep heavy-based skillet.
14. Bring the oil in the skillet to the boil over a high heat; Turn to a low heat; Dust a pork roll from the step 9 in the seasoning (4); Dip the roll in the egg solution; Carefully slide into the skillet; Deep-fry over a low heat till golden brown; Turn to a high heat; Deep-fry over a high heat for 30 seconds; Lift the pork roll up immediately; Rest on the kitchen paper (repeat the step till all the pork rolls are deep-fried and turn off the heat after all rolls are done).
15. Arrange pork roll on a serving plate; Drizzle with the sauce from the step 10; Serve immediately.
