BRAISED RADISH PORK ROLLS

INGREDIENTS :

680g pork rib eye steak, 1 daikon radish, 16g ginger, 1 red chili pepper, 1 green chili pepper, 2T oil.


SEASONINGS:
(1) 1t sesame oil, 1t chonju (i.e. rice wine), 2T grain syrup, 1t ground black pepper, 1 cup of broth.
(2) 1/2 cup of soy sauce, 1/4 cup of chonju, 1t grain syrup, 1 cup of water, 1 cup of broth, 2 pieces of cassia bark.

PREPARATION :

1. Rinse pork rib eye steak; Discard any bones; Tenderize with a meat mallet for 30 minutes; Marinate in seasoning (1) for 120 minutes.
2. Peel, rinse and slice ginger.
3. Peel, rinse and cut off both ends of daikon radish; Cut into sections.
4. Lay a piece of the pork steak from the step 1 flat; Arrange the radish on the pork; Roll the pork up to wrap the radish; Tie tightly with cotton string to secure the shape.
5. Add 1T oil to a non-stick pan; Heat over a high heat; Add the pork roll; Pan-fry over a high heat till all sides have been slightly golden brown; Turn off the heat.
6. Add 1T oil to a non-stick skillet; Heat over a high heat; Turn to a low heat; Add the ginger; Stir-fry over a low heat till fragrant; Add seasoning (2); Bring to the boil over a high heat; Turn to a low heat; Add the pork rolls; Turn to a medium-low heat; Cook over a medium-low heat for 40 minutes.
7. Rinse a red chili pepper; Cut off the stem; Cut into halves lengthwise; Discard the seeds; Cut into pieces.
8. Rinse a green chili pepper; Cut off the stem; Cut into halves lengthwise; Discard the seeds; Cut into pieces.
9. Lift the pork rolls from the step 6 up and set aside; Add the red chili pepper and the green chili pepper to the skillet; Bring to the boil over a high heat; Turn off the heat.
10. Cut the pork rolls into slices; Arrange on serving plates; Serve with the sauce from the step 9 on the side.
