STIR-FRIED SPICY OCTOPUS WITH RICE CAKES

INGREDIENTS :

300g Korean rice cake sticks, 180g octopus, 1 onion (large), 80g green bell pepper, 80g yellow bell pepper, 1 red chili pepper, 3 cloves of garlic, 18g ginger, 2t sesame oil, 1T oil.


SEASONINGS:
(1) 1/4t chonju (i.e. rice wine), 1/4t ground white pepper, 1/4t salt.
(2) 1t Korean hot red pepper powder, 1T Korean hot red pepper paste.
(3) 1t sugar, 2t sesame oil, 1T soy sauce, 4T lukewarm water, 1t chicken bouillon powder.

PREPARATION :

1. Rinse Korean rice cake sticks; Soak in water for 3 hours.
2. Lift the rice cake sticks up; Rinse and drain; Arrange in a steaming plate; Drizzle with 1t sesame oil.
3. Arrange a steaming rack in a deep heavy-based skillet; Pour water into the skillet till reaching 1/4 height of the steaming plate; Bring to the boil over a high heat; Turn to a low heat; Arrange the steaming plate with the rice cakes in the rack; Cover the skillet with its lid; Steam over a high heat for 1 hour; Turn off the heat; Uncover; Drizzle with 1t sesame oil; Toss briefly; Set aside.
4. Cut off the tentacles of octopus; Press out the beak from the head; Discard the head; Turn the body inside out and discard the entrails; Rinse thoroughly; Tenderize the body and tentacles with a mallet for 30 minutes; Cut into pieces; Marinate in seasoning (1) till ready to use.
5. Peel, rinse and cut an onion into strips.
6. Rinse a red chili pepper; Cut off the stem; Cut into halves; Cut into strips.
7. Rinse a green bell pepper; Cut off the stem; Cut into halves; Discard the seeds; Cut into strips.
8. Rinse a yellow bell pepper; Cut off the stem; Cut into halves; Discard the seeds; Cut into strips.
9. Blanch the octopus from the step 4 in boiling water for 2 minutes; Lift the octopus up immediately and rinse in cold running water till cool; Drain.
10. Peel, rinse and mince ginger.
11. Peel, rinse and mince garlic.
12. Add 1T oil to a non-stick skillet; Heat over a high heat; Turn to a low heat; Add the ginger, the garlic and the onion; Stir-fry over a low heat till the onion is soft; Turn to a high heat; Add the rice cakes and seasoning (2); Stir-fry over a high heat for 2 minutes; Add the red chili pepper, the green bell pepper and the yellow bell pepper; Stir-fry over a high heat for 1minute; Add the octopus and seasoning (3); Stir-fry over a high heat for 2 minutes; Turn off the heat; Arrange on serving plate.
