STIR-FRIED ABALONE

INGREDIENTS :

4 abalone, 1 lemon, 5t lard, 3T salt.


SEASONINGS:
3t soy sauce, 3t grain syrup, 1t salt, 1t ground black pepper, 6t chonju (i.e. rice wine).

PREPARATION :

1. Brush clean abalone; Wash in water with heavy salt.
2. Add seasonings to a bowl; Stir till well mixed.
3. Rinse a lemon and drain;
Cut into halves; Discard the seeds; Cut into wedges.
4. Heat a dry pan over a high heat; Arrange the abalone in the pan with the shell facing the pan; Arrange 4t lard around the shells; Cook over a high heat till the abalone meat start coming off from the shells; Cook over a high heat for 30 more seconds; Turn to a low heat; Using chopsticks and stainless steel spatula, remove the abalone meat from the shells completely and carefully cut off the innards; Leave the abalone shells with the lard cooking in the pan.
5. Slice the abalone; Return the abalone to the pan; Sprinkle with the seasonings; Turn to a medium heat; Stir-fry over a medium heat till the abalone becomes soft; Turn off the heat; Arrange the abalone shells on serving plates; Arrange the abalone meat on the shells; Sprinkle with the sauce; Serve with the lemon wedges.
