SPICY STEWED MUSSELS

INGREDIENTS :

500g fresh mussels with shells, 3 cloves of garlic, 1 green chili pepper, 12g ginger, 1T oil, 2T salt.


SEASONINGS:
(1) 1/2 cup of broth, 1/2 cup of water.
(2) 1T Korean hot red pepper powder.
(3) 2T Korean hot red pepper paste, 2T soy sauce, 1T malt syrup.

PREPARATION :

1. Soak mussels in water with 2T salt for 6 hours; Scrub bivalves in running water with a stiff brush to remove any sand or dirt; Scrape off any barnacles with a knife; Cut open the mussels; Give any open mussels a sharp tap and discard any that fail to close; Pull out the fibrous bread that sprouts between the two halves of the shell.
2. Peel, rinse and mince garlic.
3. Rinse and slice a green chili pepper.
4. Peel, rinse and grate ginger.
5. Pour seasoning (1) to a pot; Bring to the boil over a high heat; Add the mussels and the ginger; Cover the pot with its lid; Cook over a high heat for 6 minutes; Uncover; Turn to a medium heat; Stir over a medium heat for 3 minutes; Lift the mussels up and drain; Turn off the heat; Strain the soup through a sieve for later use.
6. Add 1T oil to a non-stick skillet; Heat over a high heat; Turn to a low heat; Add the garlic; Stir-fry over a low heat till fragrant; Add the green chili pepper and seasoning (2); Stir-fry over a low heat for 3 minutes; Add seasoning (3); Stir-fry over a low heat till well mixed; Gradually stir in the soup from the step 5; Bring to the boil over a medium heat; Turn to a low heat; Add the mussels; Toss over a low heat for 4 minutes; Turn off the heat; Arrange in a serving bowl; Serve immediately.
