SEAFOOD PANCAKES

INGREDIENTS :

140g octopus, 140g shrimps, 100g shelled scallops, 1 onion (small), 1 red bell pepper, 3 stems of rocambole, 2 eggs, 1 lemon, 1.5 cups of water, 2T oil.


SEASONINGS:
(1) 1t chonju (i.e. rice wine), 1t ground white pepper.
(2) 1t chonju, 1t ground white pepper.
(3) 1t chonju, 1t ground white pepper.
(4) 1.25 cups of white flour, 1/3 cup of rice flour, 1t salt.

PREPARATION :

1. Rinse a lemon; Cut into halves; Discard the seeds; Juice.
2. Cut off the tentacles of octopus; Press out the beak from the head; Discard the head; Turn the body inside out and discard the entrails; Rinse thoroughly; Cut into pieces; Marinate in seasoning (1) with some lemon juice till ready to use.
3. Discard the heads of shrimps; Shell; Slit twice at the back and remove veins; Rinse and drain; Cut into pieces; Marinate in seasoning (2) with some lemon juice till ready to use.
4. Rinse scallops and drain; Cut into pieces; Marinate in seasoning (3) with some lemon juice till ready to use.
5. Cut off the roots of rocambole; Rinse and drain; Chop.
6. Peel, rinse and chop onion.
7. Rinse a red bell pepper; Cut off the stem; Cut into halves; Discard the seeds; Cut into dices.
8. Beat eggs to a bowl; Whisk till well blended.
9. Add seasoning (4) to a mixing bowl; Gradually stir in 1.5 cups of water; Stir till well mixed; Add the egg solution; Stir till well mixed; Stir in all the ingredients.
10. Add 1T oil to a non-stick pan; Heat over a medium-high heat; Ladle an half of the batter into the pan; Spread out the batter with the back of the ladle; Pan-fry over a medium-high heat for 15 minutes; (Turn it over and press it down every 2.5 minutes) Set the pancake aside (Repeat the step).
11. Cut the pancakes in pieces with a sharp knife; Arrange on serving plates.
