SAUTEED SCALLOPS WITH WATERMELON

INGREDIENTS :

320g watermelon, 12 shelled frozen scallops, 2T crab roes, 15g edamame, 1 clove of garlic, 20g straw mushrooms, 20g carrot, 13g ginger, 1 clove of shallot, 2T oil, some salt.


SEASONINGS:
(1) 1/4t salt.
(2) 1t salt.

PREPARATION :

1. Thaw shelled frozen scallops; Rinse in cold running water for a while; Pat-dry the scallops with kitchen paper; Marinate in seasoning (1) till ready to use.
2. Peel, rinse and mince garlic.
3. Peel, rinse and chop shallot finely.
4. Peel, rinse and cut ginger into slices.
5. Peel, rinse and cut off both ends of carrot; Cut into slices.
6. Scrap off any dirt of straw mushrooms; Rinse and drain; Cut each into halves.
7. Wipe-clean water melon with damp kitchen paper; Cut off the hard green peel; Discard any seeds; Cut into chunks.
8. Blanch edamame in boiling water with some salt for 1.5 minutes; Lift the edamame up immediately and rinse in cold running water till cool; Drain; Shell.
9. Blanch the scallops from the step 1 in boiling water with some salt for 3 minutes; Lift the scallops up immediately and rinse in cold running water till cool; Drain.
10. Blanch the straw mushrooms in boiling water for 1 minute; Lift the straw mushrooms up immediately and drain.
11. Blanch the carrot in boiling water for 1 minute; Lift the carrot up immediately and drain.
12. Blanch the watermelon in boiling water for 30 seconds; Lift the watermelon up immediately and drain; Turn off the heat.
13. Add 1/2T to a non-stick skillet; Heat over a high heat; Turn to a medium heat; Add 2T crab roes; Stir-fry over a medium heat till fragrant; Set the crab roes aside.
14. Add 1T oil to the skillet; Heat over a high heat; Turn to a low heat; Add the ginger, the shallot and the garlic; Stir-fry over a low heat till fragrant; Add the carrot and shelled edamame; Turn to a medium heat; Stir-fry over a medium heat briefly; Add the watermelon, the straw mushrooms and the scallops; Stir-fry over a medium heat for 3 minutes; Return the crab roes to the skillet; Flavor with seasoning (2); Toss over a medium heat briefly; Turn off the heat; Arrange on serving plates; Serve immediately.
