JADE WHELK WITH GINGER SOUR SAUCE

INGREDIENTS :

10 jade whelk, 40g ginger, 2T salt.


SEASONINGS:
50ml citron vinegar, 3T grain syrup, 1/4t sea salt, 1T lukewarm water.

PREPARATION :

1. Soak whelk in water with 2T salt for 6 hours.
2. Peel and rinse ginger; Mince most; Cut the remaining into slices.
3. Add seasonings to a non-stick pan; Add the minced ginger; Stir over a low heat till bubbling; Turn off the heat; Cool at the room temperature for a while; Transfer to a bowl; Cover the bowl with cling wrap; Chill in the fridge till ready to use.
4. Lift the whelk up; Scrub in running water with a stiff brush to remove any dirt; Drain.
5. Fill a pot with water; Add the remaining ginger slices; Bring to the boil over a high heat; Add the whelk; Cook over a high heat for 10 minutes; Lift the whelk up immediately and rinse in cold running water till cool; Drain; Turn off the heat.
6. Discard the flared lips of the whelk; Arrange on serving plates; Serve with the sauce from the step 3 on the side.
