CRABMEAT OMELET

INGREDIENTS :

460g crab claws, 12 eggs, 2 stalks of spring onion, 18g ginger, 2T sesame oil.


SEASONINGS:
2t chonju (i.e. rice wine), 1/2t sea salt.

PREPARATION :

1. Peel, rinse and mince ginger.
2. Blanch crab claws in boiling water for 1 minute; Lift the crab claws up and immediately soak in iced water for 1 minute; Crack the shell with the back of knife and remove the shells; Chop.
3. Add the crab meat to a mixing bowl; Add seasonings and the ginger; Stir till well mixed; Leave it for 20 minutes.
4. cut off the roots of spring onion; Rinse and drain; Chop.
5. Beat eggs to a bowl; Whisk till well blended; Add the spring onion and the crab meat from the step 3; Stir till well mixed.
6. Add 1T sesame oil to a non-stick pan; Swirl the pan around to evenly coat the pan with the oil; Heat over a medium heat; Turn to a low heat; Ladle an half of the mixture into the pan; Pan-fry over a low heat till the egg is set but still loose; Carefully lift one edge of the egg and roll it over with a spatula; Lift another edge of the egg and roll it over with the spatula and repeat till a cylinder is formed; Cook over a low heat for 1 more minute; Set aside (repeat the step till the egg mixture are used up).
7. Carefully cut the omelets from the step 6 into halves; Arrange on serving plates.
