BRAISED SEA CUCUMBER WITH YAM

INGREDIENTS :

1 sea cucumber (medium), 200g yam, 3 dried shiitake mushrooms, some spring onion, 2 cloves of garlic, 2 cloves of shallot, 1T oil, 1 cup of rice, 3 cups of water.


SEASONINGS:
(1) 1/6t caster sugar, 1/6t corn starch, some salt, some oil.
(2) 1/3t salt, 1t glucose syrup, 1/2T soy sauce, 4T chicken broth.

PREPARATION :

1. Soak sea cucumber in water for 3 hours (there must not be any oil).
2. Put rice in a fine-mesh strainer; Rinse in running water briefly; Soak in 2.5 cups of water for 40 minutes; Strain through a sieve to a bowl for the soaking water.
3. Rinse dried shiitake mushrooms in running water briefly; Soak in 1/2 cup of water till soft.
4. Peel, rinse and cut shallot into slices diagonally.
5. Rinse spring onion and drain; Cut off any roots; Cut into sections diagonally.
6. Peel, rinse and cut yam in slices; Blanch in boiling water for 1 minute; Lift the yam up immediately and drain.
7. Lift the dried shiitake mushrooms from the step 3 up; Squeeze out any excess water to the cup; Trim off the stems; Cut into pieces; Marinate in seasoning (1) till ready to use; Strain the soaking water through a sieve for later use.
8. Drain sea cucumber; Brush-clean thoroughly; Cut into halves lengthwise; Cut off the gut and discard all innards; Rinse in running water thoroughly.
9. Pour rice-soaking water from the step 2 into a skillet; Bring to the boil over a high heat; Blanch the sea cucumber in the rice-soaking water for 5 minutes; Lift the sea cucumber up and immediately rinse in running water till cool; Drain; Turn off the heat; Cut the sea cucumber into pieces.
10. Peel, rinse and mince garlic.
11. Add seasoning (2), the dried shiitake mushroom soaking water from the step 7 to a bowl; Stir till well mixed.
12. Add 1T oil to a non-stick skillet; Heat over a high heat; Turn to a low heat; Add the garlic and the shallot; Stir-fry over a low heat till fragrant; Add the dried shiitake mushrooms; Stir-fry over a low heat for 3 minutes; Add the sea cucumber; Turn to a high heat; Stir-fry over a high heat for 3 minutes; Turn to a low heat; Add the seasoning (2); Cook over a low heat till done (roughly 20 minutes; Add the yam; Turn to a medium heat; Stir-fry over a medium heat for 3 minutes; Add most of the spring onion; Toss over a medium heat briefly; Turn off the heat; Arrange in a serving plate; Garnish with the remaining spring onion; Serve hot.
