TEA SMOKED ABALONE UDON

INGREDIENTS :

3 packs of Korean udon, 3 abalone, 2 stalks of spring onion, 24g ginger, some coriander, 2t oil, 3T salt, 90ml water.


SEASONINGS:
(1) 3t seasalt, 3t chonju (i.e. rice wine).
(2) 6T grain tea leaves, 3 cups of all-purpose flour, 3T salt, 3T sugar.
(3) 6T grain tea leaves.
(4) 1T sugar, 3 cups of chicken broth.

PREPARATION :

1. Brush clean abalone; Discard the shells; Wash in water with heavy salt; Drain.
2. Cut off the roots of spring onion; Rinse and drain; Cut into sections with 7cm length.
3. Peel, rinse and grate ginger; Squeeze the grated ginger for juice.
4. Add seasoning (1) and the ginger juice to a steaming bowl; Stir till well mixed; Add the abalone; Stir till well mixed; Leave it for 15 minutes.
5. Rinse coriander and drain; Discard the stems.
6. Arrange a steaming rack in a deep heavy-based skillet; Pour water into the skillet till 1/4 height of the steaming bowl; Bring to the boil over a high heat; Turn to a low heat; Arrange the steaming bowl with the abalone from the step 4 on the rack; Turn to a high heat; Cover the skillet with its lid; Steam over a high heat for 6 minutes; Turn off the heat; Lift the abalone up; Cut each into 4 pieces.
7. Add seasoning (2) to a non-stick skillet; Arrange a steaming rack on top of the seasoning; Arrange the spring onion on the rack; Arrange the abalone on the top of the spring onion; Cover the skillet with its lid; Steam over a medium heat for 1 minute; Turn off the heat; Leave it till ready to use.
8. Blanch Korean udon in boiling water with some oil and some salt for a number of minutes (according to the package instruction); Lift the udon up immediately and rinse in cold running water till cool; Drain.
9. Pour 90ml water to a pan; Bring to the boil over a high heat; Add seasoning (3); Cook over a high heat for 3 minutes; Turn off the heat; Strain the tea soup through a sieve to a skillet.
10. Pour seasoning (4) to the skillet with the tea soup; Stir over a low heat till the sugar is dissolved; Add the udon; Cook over a high heat for 30 seconds; Turn off the heat; Arrange in serving bowls; Put the abalone on the top of the udon; Garnish with the coriander; Serve immediately.
