SWEET POTATO NOODLES

INGREDIENTS :

227g sweet potato noodles, 170g rib-eye beef, 120g spinach, 1 onion, 6 shiitake mushrooms, 1 carrot, 1 stalk of spring onion, 2 cloves of garlic, 2T toasted sesame seeds, 2T oil, 1T salt.


SEASONINGS:
(1) 1t grain syrup, 1t sesame oil, 1t ground black pepper, 1t chonju wine.
(2) 1/2t sesame oil, 1/4t sea salt.
(3) 1t soy sauce, 1t sesame oil.
(4) 1/4 cup of grain syrup, 1T sesame oil, 1/4 cup of soy sauce.

PREPARATION :

1. Wipe-clean rib-eye beef with damp kitchen paper; Cut into strips; Marinate in seasoning (1) till ready to use.
2. Discard the wilted spinach; Cut off the roots;
Soak in water with some salt for 30 minutes; Lift the spinach up and rinse; Drain.
3. Peel, rinse and mince garlic.
4. Blanch the spinach in boiling water with some salt and oil for 3 minutes; Lift the spinach up immediately and rinse in cold running water till cool; Drain; Squeeze any excess water; Shape into a ball; Cut into halves; Transfer to a mixing bowl; Add half of the garlic; Add seasoning (2); Mix well; Set aside to let the flavors soak in.
5. Blanch sweet potato noodles in boiling water with some salt and oil for a few minutes (according to the package instruction); Lift the noodles up immediately and rinse in cold running water till cool; Drain.
6. Peel, rinse and slice an onion.
7. Peel, rinse and cut off both ends of a carrot; Cut into julienne.
8. Cut off the roots of spring onion; Rinse and drain; Cut into sections.
9. Rinse shiitake mushrooms; Discard the stems; Slice.
10. Add 1T oil to a non-stick skillet; Heat over a high heat; Turn to a low heat; Add the remaining garlic;
Stir-fry over a low heat till fragrant; Add the carrot, the onion and shiitake mushrooms; Stir-fry over a low heat for 2 minutes; Add the beef and seasoning (3); Stir-fry over a low heat for 3 minutes; Add the spring onion; Turn to a high heat; Stir-fry over a high heat for 1 minute; Turn off the heat.
11. Add seasoning (4) to a big mixing bowl; Mix well; Add all the ingredients; Toss to mix well; Arrange in serving bowls; Serve warm.
