SOY MILK NOODLES

INGREDIENTS :

1 cup of soy beans, 4 cups of lukewarm water, 2 packs of Korean corn noodles, some table salt.


SEASONINGS:
1 tsp oil, 1 tsp salt.

PREPARATION :

1. Rinse soy beans; Soak in plenty of water for 10 hours; Drain; Transfer the soy beans to a large pot with fresh water covering the soy beans; Cover the pot with its lid; Cook over a high heat for 15 minutes; Turn off the heat; Drain with a strainer; Transfer the soy beans in a bowl; Fill the bowl with fresh water and gently "roll" them between your hands to remove their translucent skin; Separate the thin translucent skin of the soybeans by slowly pouring off the skins and water into a strainer.
2. Transfer the skinless soybeans to blender; Pour 4 cups of lukewarm water into the blender; Process till smooth; Strain through a sieve into a large container; Seal and chill in the fridge till ready to use (must be used up within 2 to 3 days).
3. Fill a pot with water; Add seasonings; Bring to the boil over a high heat; Blanch Korean corn noodles in the seasoned water for few minutes (following the package instruction); Lift the noodles up immediately and rinse in cold running water in a strainer till cool; Drain.
4. Take the soy bean milk out of the fridge and fill in serving plates; Sprinkle with some table salt; Stir briefly; Arrange the corn noodles in the serving plates; Serve cold.
