PUMPKIN GREEN TEA BEAN VERMICELLI

INGREDIENTS :

4 dried medium-sized anchovies, 80g pumpkin, 120g Korean fried fish balls, 50g leek, 60g spinach, 50g Korean green bean vermicelli, 9g ginger, 1 stalk of coriander, 1.5T oil, 2t salt, 1.5 cups of water.


SEASONINGS:
(1) some salt.
(2) 1T soy sauce, 1T chonju (i.e. rice wine), 1.5T grain syrup.

PREPARATION :

1. Rinse dried anchovies and drain.
2. Pour 1.5 cups of water to a pot; Add the anchovies; Bring to the boil over a high heat; Turn to a medium heat; Cook over a medium heat for 10 minutes; Turn off the heat; Strain through a stainless steel sieve; Discard the anchovies.
3. Discard the wilted spinach; Cut off any roots;
Soak in water with some salt for 20 minutes.
4. Peel, rinse and grate ginger; Squeeze the grated ginger for juice.
5. Rinse fried fish balls and drain; Cut into pieces; Marinate in seasoning (1) with the ginger juice from the step 4 till ready to use.
6. Cut off the roots of leek; Rinse and drain; Cut into sections.
7. Rinse coriander and drain; Chop finely.
8. Discard the seeds of pumpkin; Peel; Rinse and drain; Cut into pieces.
9. Lift the spinach from the step 3 up; Rinse and drain; Cut into sections.
10. Blanch the fish balls from the step 5 in boiling water for 10 seconds; Lift the fish balls up immediately and rinse in cold running water briefly; Drain.
11. Add seasoning (2) to a bowl; Stir till well mixed.
12. Add 1T oil to a clay pot; Heat over a medium-high heat; Turn to a low heat; Add the leek; Stir-fry over a low heat till fragrant; Add the pumpkin; Stir-fry over a medium heat for 3 minutes; Pour the anchovy soup from the step 2 into the pot; Add the fish balls from the step 10 and the seasoning (2); Bring to the boil over a medium heat; Turn to a low heat; Cover the pot with its lid; Cook over a low heat for 30 minutes.
13. Blanch green tea bean vermicelli in boiling water with some oil and some salt for a few minutes (according to the package instruction); Lift the vermicelli up immediately and rinse in cold running water till cool; Drain.
14. Remove the lid of the pot from the step 12; Add the corainder and the vermicelli; Cook over a low heat for 2 minutes; Turn off the heat; Serve hot.
