JAPCHAE

INGREDIENTS :

180g beef tenderloin, 100g dangmyeon (i.e. Korean glass noodles), 1 clove of garlic, 30g wood ear fungus, 1 onion, 1 red bell pepper (small), 1 green bell pepper (small), 1 yellow bell pepper (small), 20g tinned bamboo shoot, 2 cups of oil.


SEASONINGS;
(1) 1T soy sauce, 1t sesame oil, 1t chonju (i.e. rice wine), 1/4t grain syrup.
(2) 2T Korean hot red pepper paste, 1T soy sauce, 3T sesame oil, 1t chicken bouillon powder, 1/4 cup of beef broth.

PREPARATION :

1. Rinse wood ear fungus; Soak in water till soft.
2. Wipe-clean beef tenderloin with damp kitchen paper; Cut into pieces across the grain; Marinate in seasoning (1) for at least 30 minutes.
3. Blanch bamboo shoots in boiling water for 30 seconds; Lift the bamboo shoots up immediately and rinse in cold running water till cool; Drain; Cut into match sticks.
4. Peel, rinse and mince garlic.
5. Soak Dangmyeon in water till soft.
6. Rinse red bell pepper and drain; Cut off the stem; Cut into halves lengthwise; Discard the seeds;
Cut into match sticks.
7. Rinse green bell pepper and drain; Cut off the stem; Cut into halves lengthwise; Discard the seeds; Cut into match sticks.
8. Rinse yellow bell pepper and drain; Cut off the stem; Cut into halves lengthwise; Discard the seeds; Cut into match sticks.
9. Lift the wood ear fungus from the step 1 up; Rinse and drain; Cut off the stem; Cut into shreds.
10. Peel, rinse and cut an onion into match sticks.
11. Lift the Dangymeon from the step 5 up; Drain.
12. Add seasoning (2) to a bowl; Stir till well mixed.
13. Pour 2 cups of oil into a deep non-stick heavy-based skillet; Bring to the boil over a high heat; Jiggle the beef from the step 2 in the oil briefly; Lift the beef up immediately and drain.
14. Set the oil aside, leaving 3T oil; Heat over a high heat; Turn to a low heat; Add the garlic, the onion, the bamboo shoots and the wood ear fungus from the step 9; Stir-fry over a low heat till fragrant; Add the Dangmyeon and the seasoning (2); Cover the skillet with its lid; Turn to a medium heat; Cook over a medium heat for 3 minutes; Uncover; Add the beef and all the bell peppers; Turn to a medium-high heat; Stir-fry over a medium-high heat for 3 minutes; Turn off the heat; Arrange in serving plates; Serve immediately.
