CHICKEN NOODLES

INGREDIENTS :

454g knife noodles, 480g chicken, 1 zucchini, 1T oil.


SEASONINGS:
(1) 1t chonju (i.e. rice wine), 1t chicken bouillon powder, some sesame oil, some ground white pepper.
(2) 1t salt, 2t oil.
(3) 1.5L chicken broth, 1.5L water.

PREPARATION :

1. Rinse chicken; Blanch in boiling water for 20 seconds; Lift the chicken up immediately and rinse in cold running water till cool; Drain; Marinate in seasoning (1) for 45 minutes.
2. Rinse zucchini; Scrape off any hair with a knife; Rinse and drain; Cut off both ends; Cut into strips; Blanch in boiling water with 1T oil for 3 minutes; Lift the zucchini up and drain.
3. Blanch knife noodles in boiling water with seasoning (2) for a few minutes (according to the package instruction); Lift the noodles up immediately and rinse in cold running water till cool; Drain.
4. Pour seasoning (3) to a pot; Bring to the boil over a high heat; Add the chicken; Turn to a medium heat; Cook over a medium heat for 20 minutes; Lift the chicken up and drain; Turn to a low heat; Cover the pot with its lid; Cook over a low heat till ready to use.
5. Discard the skin and bones of the chicken; Cut into strips.
6. Arrange the knife noodles in serving bowls; Arrange the chicken and zucchini on the top; Spoon the soup from the step 4 into the bowls; Serve immediately.
