BRAISED GREEN BEAN NOODLES WITH KIMCHI

INGREDIENTS :

70g beer tenderloin, 70g white cabbage kimchi, 80g green bean noodles, 50g onion, 50g honshimeji mushrooms, 50g snow peas, 1 red chili pepper, 1 stem of Peking scallion, 1 clove of garlic, 8g ginger, 1.5T salt, 1T oil.


SEASONINGS:
(1) 1/2T soy sauce, 2/3T chonju (i.e. rice wine), 2t citron honey.
(2) 1/5t salt, 1/2t sesame oil.
(3) 1/2T soy sauce, 1/2t Korean hot red pepper paste, 1t caster sugar, 1t ground sesame seeds, 1t sesame oil.

PREPARATION :

1. Drain white cabbage kimchi.
2. Peel, rinse and mince ginger.
3. Peel, rinse and mince garlic.
4. Cut off the root of Peking scallion; Rinse and drain; Chop finely.
5. Wipe-clean beef tenderloin with damp kitchen paper; Cut into thin slices across the grain; Cut into shreds; Marinate in seasoning (1) with the ginger, the garlic and the Peking scallion for at least 60 minutes.
6. Peel, rinse and julienne onion.
7. Cut off the roots of honshimeji mushrooms; Rinse and drain.
8. Rinse a red chili pepper and drain; Cut off the stem; Cut into halves lengthwise; Discard the seeds; Julienne.
9. Tear the hard vein on both sides of snow peas off from the top to the bottom; Rinse and drain; Blanch in boiling water with 1T salt for 1 minute; Lift the snow peas up immediately; Rinse in cold running water till cool; Drain; Transfer to a bowl; Add seasoning (2); Toss; Leave it till ready to use.
10. Cut the white cabbage kimchi from the step 1 into shreds.
11. Blanch green bean noodles in boiling water with some salt for 2 minutes; Lift the noodles up immediately and rinse in cold running water till cool; Drain.
12. Add 1T oil to a non-stick skillet; Swirl the skillet around to evenly coat the skillet with the oil; Heat over a high heat; Turn to a low heat; Add the beef from the step 5; Stir-fry over a low heat for 1 minute; Set the beef aside; Add the white cabbage kimchi and the onion; Stir-fry over a low heat till the onion is translucent; Add the honshimeji mushrooms and the snow peas; Turn to a medium heat; Stir-fry over a medium heat for 2 minutes; Add the green bean noodles and seasoning (3); Stir-fry over a medium heat for 1 minute; Return the beef to the skillet; Add the red chili pepper; Turn to a high heat; Stir-fry over a high heat for 1.5 minutes; Turn off the heat; Arrange on serving plates; Serve immediately.
