JOGIYANGNYEOM-GUI

INGREDIENTS :

2 yellow croaker (medium size), 30g ginger, 1 clove of garlic, 1 clove of shallot, 4T oil, some radish sprouts.


SEASONINGS:
(1) 2t chonju (i.e. rice wine) 2t chicken bouillon powder, 2t lemon juice, some ground white pepper.
(2) 1T soy sauce, 2T Korean hot red pepper paste, 1t grain syrup.

PREPARATION :

1. Scale yellow croakers; Discard the gills and innards; Rinse the black membrane thoroughly; Rinse the whole yellow croakers in running water; Pat dry; Make three diagonal cuts on each side;
Marinate in seasoning (1) for 60 minutes.
2. Add 2T oil to a saucepan; Bring to the boil over a medium heat; Turn off the heat; Pour over the yellow croakers.
3. Pre-heat an over to 200 degree celsius.
4. Peel, rinse and mince garlic.
5. Peel, rinse and mince shallot.
6. Peel, rinse and grate ginger; Squeeze the grated ginger for juice.
7. Rinse radish sprouts and drain.
8. Add seasoning (2), the garlic, the shallot and 2t ginger juice to a bowl; Stir till well mixed.
9. Brush some oil on the grilling rack; Arrange the yellow croakers on it; Turn the heat down to 180 degree celsius; Put the yellow croakers into the oven and grill for 18 minutes (Brush on the sauce from the step 7 and flip over every 3 minutes); Take the yellow croakers out of the oven and arrange on serving plates; Garnish with the radish sprouts.
