GRILLED BARAMUNDI FILLET

INGREDIENTS :

150g baramundi fillet with skin, 1 lemon, 40ml oil, 5g rocambole.


SEASONINGS:
some salt, some chonju (i.e. rice wine).

PREPARATION :

1. Rinse and chop rocambole finely.
2. Rinse a lemon; Cut into halves; Grate an half for zest; Juice the remaining.
3. Rinse barramundi fillet; Remove any fine bones with a pair of tweezers; Marinate in seasoning (1) with some lemon juice and some rocambole for 30 minutes.
4. Add 40ml oil to a pan; Heat over a low heat; Add the lemon zest; Cook over a low heat for 6 minutes; Turn off the heat; Cool.
5. Pre-heat a broiler to its medium heat.
6. Grease a piece of aluminium foil with the lemon oil from the step 4.
7. Arrange the greased foil on the broiler; Arrange the baramundi fillet on the foil with the skin facing the foil; Brush the fillet with the lemon oil from the step 4; Grill over a medium heat for 2 minutes; Flip over and brush with the lemon oil; Grill over a medium heat for 1 minute; Flip over and brush with the lemon oil; Grill over a medium heat for 2 minutes; Flip over and brush with the lemon oil; Grill over a medium heat for 1 minute; Remove the fillet from the heat; Serve immediately.
