BUGEO GUI

INGREDIENTS :

2 dried pollock, some spring onion, 1 clove of garlic, 10g ginger.


SEASONINGS:
(1) 1T soy sauce, 1/2T sesame oil.
(2) 1t soy sauce, 2T Korean chili bean paste, 1t chonju, 1t caster sugar, some ground white pepper, some sesame oil.

PREPARATION :

1. Add seasoning (1) to a bowl; Stir till well mixed.
2. Rinse dried pollock and soak in water for 20 minutes; Lift the dried pollock up and drain; Wrap in damp cloth for 10 minutes; Squeeze to dry; Marinate in the seasoning (1) till ready to use.
3. Peel, rinse and mince garlic.
4. Rinse spring onion; Cut off any roots; Chop.
5. Pre-heat a grill to its maximum heat.
6. Peel, rinse and grate ginger; Squeeze the grated ginger for juice to a bowl; Add seasoning (2) and the garlic to the bowl; Stir till well mixed.
7. Arrange the dried pollock from the step 1 in the grilling wire mesh; Put the mesh on the grill and grill for 6 minutes (flip over every 1 minute); Remove the mesh from the heat; Evenly brush the seasoning (2) on both sides of the dried pollock; Return the mesh with the dried pollock to the heat; Gill for 4 minutes (Brush with the seasoning (2) and flip over every 1 minute); Remove the dried pollock from the heat; Turn off the grill; Remove the dried pollock from the mesh; Carefully cut the pollock into pieces with a pair of scissors; Arrange on serving plates; Garnish with the spring onion.
