BRAISED HAIRTAIL WITH POTATOES

INGREDIENTS :

460g hairtail fish, 3 potatoes, 130g daikon radish, 100g cabbage kimchi, 1 stem of garlic sprout, 2 cloves of garlic, 23g ginger, 3.5 cups of oil.


SEASONINGS:
(1) 1t chonju (i.e. rice wine), some ground white pepper; some salt.
(2) 2 cups of broth.
(3) 1T Korean hot red pepper powder, 1t grain syrup, 2T soy sauce.

PREPARATION :

1. Discard the gills and innards of hairtail fish; Cut off the head and the tail; Rinse the black membrane thoroughly; Rinse the whole hairtail fish in running water; Pat dry; Cut into pieces; Marinate in seasoning (1) for 20 minutes.
2. Cut off the root of garlic sprout; Rinse and drain; Cut into sections diagonally.
3. Peel, rinse and slice ginger.
4. Peel, rinse and slice garlic.
5. Peel, rinse and cut off both ends of daikon radish; Cut into round-slices.
6. Peel, rinse and cut potatoes into round-slices.
7. Cut cabbage kimchi into pieces.
8. Add 1T oil to a non-stick pan; Swirl the pan around to evenly coat the pan with the oil; Heat over a high heat; Turn to a medium heat; Arrange the hairtail fish from the step 1 into the pan; Pan-fry over a medium heat till both sides have been slightly golden brown; Turn off the heat; Pat-dry with kitchen paper.
9. Pour 3 cups of oil into a deep heavy-based skillet; Bring to the boil over a high heat; Jiggle the potatoes in the oil briefly; Lift the potatoes up immediately and drain.
10. Set the oil aside, leaving 1T oil in the skillet; Heat over a high heat; Turn to a low heat; Add the ginger and the garlic; Stir-fry over a low heat till fragrant; Add the cabbage kimchi; Turn to a medium heat; Stir-fry over a medium heat till fragrant; Add the daikon radish; Stir-fry over a medium heat for 3 minutes; Return the potatoes to the skillet; Stir-fry over a medium heat for 2 minutes; Pour seasoning (2) into the skillet; Add seasoning (3); Bring to the boil over a high heat; Turn to a medium-low heat; Arrange the hairtail fish from the step 8 into the skillet; Cook over a medium-low heat till only half of the sauce has left; Add the garlic sprouts; Cook over a medium-low heat for 2 minutes; Turn off the heat.
