BAKED MACKEREL

INGREDIENTS :

1 mackerel (about 1kg), 1 stalk of spring onion, 4 cloves of garlic, 8g ginger, 1 lemon, 2t sea salt.


SEASONINGS:
(1) 2T Korean red pepper flakes, 3T Korean hot red pepper paste, 1T soy sauce, 1t oyster sauce, 1T light brown sugar.
(2) 1T sesame oil.

PREPARATION :

1. Peel, rinse and mince garlic.
2. Peel, rinse and mince ginger.
3. Rinse a lemon; Cut into halves; Discard the seeds.
4. Add seasonings, the garlic and the ginger to a bowl; Slightly juice an half of lemon over the bowl; Stir till well mixed.
5. Pre-heat an oven to 190 degree celsius.
6. Discard the gills and innards of mackerel; Rinse the black membrane thoroughly; Rinse the whole mackerel in running water; Pat dry; Lay the mackerel on baking sheet; Make 4 slashes into the flesh of the mackerel on both sides; Sprinkle with some sea salt over the mackerel, including the cavity.
7. Arrange the baking sheet with the mackerel on a rack in the top third of the oven; Bake the mackerel for 3 minutes; Remove the mackerel from the oven; Increase the oven temperature to 220 degree celsius.
8. Brush with seasoning (2); Carefully spread the sauce from the step 4 on both sides of the mackerel; Return the mackerel to the oven; Bake for another 1.5 minutes; Carefully take the mackerel out of the oven; Flip it over; Return to the oven; Bake for another 1.5 minutes; Take the mackerel out of the oven and arrange on serving plate.
