SPICY CHICKEN WITH CABBAGE

INGREDIENTS :

560g boneless chicken thighs, 3 cloves of garlic, 40g garlic chives, 30g coriander, 6g ginger, some black pepper corns, 2 stems of spring onion, 1.5t water, 1T sesame oil.


SEASONINGS:
(1) 25ml soy sauce, 13ml grain syrup, 1t chonju (i.e. rice wine).
(2) 1t ground black pepper, 1t chicken bouillon powder.
(3) 1t Korean coarse hot red pepper flakes 1T rice vinegar, 1/2t salt, 1T sesame oil.
(4) 1t Korean coarse hot red pepper flakes.

PREPARATION :

1. Peel and rinse garlic; Slice one third; Mince the remaining.
2. Peel, rinse and slice ginger.
3. Add black pepper corns to a mortar and pestle; Crush.
4. Pour 1.5t water to a saucepan; Add the black pepper corns, the garlic slices and the ginger; Bring to the boil over a high heat; Turn to a low heat; Cook over a low heat for 10 minutes; Add seasoning (1); Stir till well mixed; Turn to a high heat; Cook over a high heat for 2 minutes; Turn off the heat; Cool at the room temperature; Strain the sauce through a sieve into a bowl.
5. Rinse chicken thighs in cold running water for 6 minutes; Discard the skin; Cut into pieces; Marinate in seasoning (2) for at least 60 minutes.
6. Cut off the stem of white cabbage; Soak in water for 20 minutes; Lift the cabbage up; Rinse and drain; Chop coarsely.
7. Add seasoning (3) to a mixing bowl; Stir till well mixed; Add the white cabbage; Toss till well mixed.
8. Cut off the roots of garlic chives; Rinse and drain; Cut into sections.
9. Rinse and drain coriander; Chop.
10. Cut off the roots of spring onion; Rinse and drain; Chop finely.
11. Add 1T sesame oil to a non-stick skillet; Heat over a medium heat; Turn to a low heat; Add the garlic; Stir-fry over a low heat till fragrant; Add the chicken from the step 5; Turn to a medium heat; Stir-fry over a medium heat for 1 minute; Add seasoning (4), the sauce from the step 4 and the spring onion; Turn to a high heat; Stir-fry over a high heat till the chicken is done (roughly 2 minutes); Add the garlic chives; Stir-fry over a high heat till the sauce has thickened (roughly another 2 minutes); Turn off the heat.
12. Arrange the white cabbage from the step 7 on the plate; Arrange the chicken mixture on the top of the cabbage; Garnish with the coriander; Serve immediately.
