SCRAMBLED EGGS WITH TOMATOES

INGREDIENTS :

3 eggs, 4 tomatoes, 3 stems of spring onion, 1/2T oil, 1/2 cup of water.


SEASONINGS:
(1) 1/3t salt, 1/2t ground white pepper.
(2) 1T grain syrup.

PREPARATION :

1. Beat eggs to a bowl; Whisk till well blended; Add seasonings; Whisk till well blended.
2. Cut off the roots of spring onion; Rinse and drain; Chop.
3. Rinse tomatoes and drain; Cut off the stems; Cut into wedges.
4. Add 1/2T oil to a non-stick skillet; Heat over a high heat; Pour the egg solution into the skillet; Stir-fry over a high heat till sets; Set the scrambled egg aside; Add the tomatoes; Stir-fry over a high heat till the liquid start coming out; Add 1/2 cup of water; Stir-fry over a high heat till most of the liquid has evaporated; Stir in seasoning (2); Return the scrambled egg to the skillet; Stir-fry over a high heat briefly; Turn off the heat; Arrange on a serving plate; Garnish with the spring onion.
