BRAISED DUCK WITH GINGER

INGREDIENTS :

1 duck, 160g young ginger 7 shallots, 3T oil.


SEASONINGS:
(1) 1t chonju (i.e. rice wine), 1t chicken bouillon powder, some ground white pepper.
(2) 3T soy sauce, 2t grain syrup, 1 cup of chicken broth.

PREPARATION :

1. Discard any innards of a duck; Cut off the head and tail; Remove any hair with a pair of tweezers; Rinse and drain; Cut into pieces; Marinate in seasoning (1) for at least 120 minutes.
2. Peel, rinse and cut young ginger into pieces.
3. Peel, rinse and cut shallots into halves.
4. Add seasoning (2) to a bowl; Stir till well mixed.
5. Add 2T oil oil to a non-stick skillet; Heat over a high heat; Turn to a medium heat; Arrange the duck from the step 1 into the skillet; Pan-fry over a medium heat till both sides have been golden brown; Set the duck aside.
6. Add 1T oil to the skillet; Heat over a high heat; Turn to a low heat; Add the ginger and the shallot; Stir-fry over a low heat till fragrant; Add the duck; Toss over a low heat briefly; Add the seasoning from the step 4; Cover the skillet with its lid; Cook over a low heat till the sauce has been absorbed; Turn off the heat; Arrange on serving plates.
