KIMCHI BEEF STEAK

INGREDIENTS :

230g beef steak, 70g white cabbage kimchi, 1 clove of garlic, 1 red chili pepper, 1 green chili pepper, 40g daikon radish, 1.5T pine nuts, some coriander.


SEASONINGS:
(1) 1T citron honey, 1/4T soy sauce, 1/2T chonju (i.e. rice wine), 1t sesame oil, 1t ground black pepper.
(2) 20g white cabbage kimchi.
(3) 1/2t sugar, 1t sesame oil, 1t sesame seeds.
(4) 1t sesame oil, 1T oil.

PREPARATION :

1. Drain white cabbage kimchi.
2. Wipe beef steak with the damp kitchen paper; Trim off the fat; Cut into pieces with 1cm thickness across the grain; Tenderize with a meat mallet for 30 minutes; Marinate in seasoning (1) for 30 minutes.
3. Add seasoning (2) to a blender; Process into puree; Add to the beef steak; Stir briefly; Leave it till ready to use.
4. Cut the white cabbage kimchi into shreds; Marinate in seasoning (3) till ready to use.
5. Rinse a red chili pepper and drain; Cut off the stem;
Discard the seeds; Cut into pieces.
6. Rinse a green chili pepper and drain; Cut off the stem; Discard the seeds; Cut into pieces.
7. Peel, rinse and cut off both ends of daikon radish; Julienne.
8. Peel, rinse and slice garlic.
9. Wrap pine nuts with a piece of cloth; Beat it with mallet briefly.
10. Rinse coriander and drain; Discard the stems.
11. Add seasoning (4) to a non-stick pan; Heat over a medium heat; Add the garlic; Stir-fry till golden brown; Set the garlic aside.
12. Arrange the beef steak into the pan; Pan-fry over a high heat till medium; Evenly sprinkle both sides with the pine nuts from the step 9; Pan-fry each side over a high heat till medium well; Turn off the heat.
13. Arrange the beef steaks on serving plates; Put the white cabbage kimchi from the step 4 on top of each steak; Arrange the garlic from the step 11, the red chili pepper and the green chili pepper on the top; Garnish with the radish and the coriander.
