GRILLED BEEF TENDERLOIN ROLLS

INGREDIENTS :

1kg beef tenderloin fillet, 300g cepes, 50g morel, some thyme, 2T oil.


SEASONINGS:
(1) 2T chonju (i.e. rice wine), 2T grain syrup.
(2) 1t chonju, 1T broth.
(3) 1T sesame paste, some soy sauce, 1t grain syrup.

PREPARATION :

1. Wipe clean beef tenderloin fillet with damp kitchen paper; Trim off the fat; Trim each fillet into rectangle; Tenderize with mallet for 20 minutes; Marinate in seasoning (1) for 30 minutes.
2. Rinse thyme and drain.
3. Chop cepes.
4. Chop morel.
5. Add 1t oil to a non-stick pan; Heat over a high heat; Turn to a low heat; Add the cepes and the morel; Stir-fry over a low heat briefly; Add seasoning (2); Stir-fry over a low heat till fragrant; Turn off the heat.
6. Pre-heat the broiler to its maximum heat.
7. Lay a piece of beef fillet flat; Arrange a layer of morel mixture from the step 5 on the beef; Press gently while rolling (repeat the step till the beef fillet is used up).
8. Add seasoning (3) to a non-stick sauce pan; Stir over a low heat till well blended; Turn off the heat.
9. Arrange a greased aluminium foil on the broiler; Turn to a medium heat; Arrange the beef rolls on the foil; Brush the rolls with the sauce from the step 8; Grill over a medium heat for 4 minutes (Flip over every 1 minute); Remove the beef rolls from the heat; Turn off the heat.
10. Slice the beef rolls with a sharp knife; Arrange the beef rolls on a serving plate; Drizzle with the remaining sauce from the step 4; Garnish with the thyme; Serve immediately.
