BRAISED BEEF RIBS

INGREDIENTS :

1361g beef short ribs, 4 cloves of garlic, 1 daikon radish (medium), 1 onion, 3 carrots, 18g ginger, 1 cup of pine nuts.


SEASONINGS:
(1) 1T citron honey, 1t chonju (i.e. rice wine).
(2) 1 cup of soy sauce, 3T grain syrup, 2T sesame oil.
(3) 1.5 cups of beef broth, 1.5 cups of water.

PREPARATION :

1. Wipe-clean with damp kitchen paper; Trim off the fat of beef short ribs; Marinate in seasoning (1) till ready to use.
2. Heat a non-stick skillet over a high heat; Add pine nuts; Stir-fry over a high heat till dry; Turn to a medium heat; Stir-fry till golden and fragrant with a crackling sound (around 7 minutes); Turn off the heat.
3. Peel, rinse and mince garlic.
4. Peel, rinse and cut off both ends of a daikon radish; Cut into cubes.
5. Peel, rinse and cut off both ends of carrots; Slice.
6. Peel, rinse and slice ginger.
7. Peel, rinse and cut an onion into cubes.
8. Add seasoning (2) and the garlic to a mixing bowl; Stir till well mixed.
9. Arrange the ginger slices at the bottom of a non-stick heavy-based pot; Arrange carrots and diakon radish on the top of the ginger; Arrange the beef short ribs next; Put the onions on the top; Carefully pour the sauce from the step 8 into the pot; Add seasoning (3); Bring to the boil over a high heat; Turn to a low heat; Cook over a low heat for 1 hour; Skim off the fat; Cook over a low heat for 15 more minutes; Skim off the fat again; Turn off the heat; Sprinkle with the pine nuts; Serve hot.
