BEEF STUFFED CUCUMBER

INGREDIENTS :

4 baby cucumbers, 80g beef steak, 3 dried shiitake mushrooms, 1 red bell pepper, 4 cloves of garlic, 24g ginger, 1/2 cup of water, 1t black pepper corns, 3T salt, 2t sesame oil.


SEASONINGS:
1t sesame oil.

PREPARATION :

1. Peel, rinse and slice ginger.
2. Peel, rinse and slice garlic.
3. Add 1t black pepper corns to a mortar and pestle; Crush.
4. Pour 1/2 cup of water to a saucepan; Add the garlic, the ginger and the black pepper corns; Bring to the boil over a high heat; Turn to a low heat; Cook over a low heat for 10 minutes; Add seasoning (1); Stir over a low heat till the sugar is dissolved; Bring to the boil over a high heat again; Cook over a high heat for 2 minutes; Turn off the heat; Cool at the room temperature; Strain the sauce through a fine-mesh sieve to a container; Chill in the fridge till ready to use.
5. Soak dry shiitake mushrooms in water till soft.
6. Add seasonings and 1T sauce from the step 4 to a bowl; Stir till well mixed.
7. Wipe-clean beef steak with damp kitchen paper; Discard any bones; Tenderize with a meat mallet for 20 minutes; Cut into strips across the grain; Marinate in the sauce from the step 6 till ready to use.
8. Rub-clean cucumbers with some salt; Rinse and drain; Cut off both ends; Rub each end with another cut-off end for a minute; Cut into sections with 5cm length diagonally; Cut slits about 6mm apart and 6mm deep into the cucumber (important not to cut through); Sprinkle with some salt; Leave it for 3 minutes; Dry with kitchen paper.
9. Rinse a red bell pepper and drain; Cut off the stem; Cut into halves lengthwise; Discard the seeds; Cut into match sticks.
10. Lift the dried shiitake mushrooms from the step 5 up; Drain; Trim off the stems; Cut into match sticks.
11. Add 1t sesame oil to a non-stick pan; Heat over a medium heat; Add the cucumbers; Cook over a medium heat for 30 seconds; Turn them over; Cook over a medium heat for another 30 seconds; Set the cucumbers aside.
12. Add the beef from the step 7 to the pan; Stir-fry over a medium heat for 2 minutes; Set the beef aside.
13. Add 1t sesame oil to the pan; Heat over a medium heat; Add the dried shiitake mushrooms; Stir-fry over a medium heat for 8 minutes; Set the shiitake mushrooms aside; Turn off the heat.
14. Carefully insert a slice of beef, red bell pepper and shiitake mushrooms into each slit of the cucumber (repeat the step till the ingredients are used up).
15. Arrange on serving plates; Drizzle with some of the sauce from the step 4.
