BEEF EGG CUSTARD

INGREDIENTS :

60g ground beef, 1 stalk of spring onion, 4 eggs, 1 clove of garlic, 1t toasted sesame seeds, 2.5 cups of beef broth.


SEASONINGS:
(1) 1t chonju (i.e. rice wine), 1/2t grain syrup, 1t sesame oil, some ground black pepper, 1/8t salt.
(2) 1/8t salt.

PREPARATION :

1. Rinse ground beef and drain; Marinate in seasoning (1) till ready to use.
2. Cut off the roots of spring onion; Rinse and drain; Chop finely.
3. Peel, rinse and mince garlic.
4. Add toasted sesame seeds to a mortar and pestle; Crush.
5. Beat eggs to a bowl; Whisk till well blended; Pour 2.5 cups of beef broth; Add seasoning (2); Whisk till well mixed; Divide into 4 steaming bowls.
6. Add 1T of the chopped spring onion and the garlic to the beef from the step 1; Stir till well mixed.
7. Spoon 1T ground beef mixture from the step 6 into the steaming bowls with the egg solution from the step 5; Break up the beef mixture with the spoon; Sprinkle with the remaining spring onion.
8. Arrange a steaming rack in a deep heavy-based skillet; Pour water into the skillet till 1/4 height of the steaming bowls; Bring to the boil over a high heat; Turn to a low heat; Arrange the steaming bowls from the step 7 on the rack; Cover the skillet with its lid; Steam over a low heat for 9 minutes; Turn off the heat; Serve hot.
