BARBECUED BEEF RIBS

INGREDIENTS :

1.8kg beef short ribs, 1 apple, 6 cloves of garlic, 8g ginger, 1 stalk of spring onion, 1/2t black pepper corns, 22ml water.


SEASONINGS:
(1) 88ml soy sauce, 44ml grain syrup, 22ml chonju (i.e. rice wine).
(2) 2T sesame oil, 1/4t ground black pepper.

PREPARATION :

1. Peel and rinse garlic; Cut one third into slices; Mince the remaining.
2. Peel, rinse and slice ginger.
3. Add black pepper corns to a mortar and pestle; Crush.
4. Pour 22ml water to a saucepan; Add the black pepper corns, the garlic slices and the ginger; Bring to the boil over a high heat; Turn to a low heat; Cook over a low heat for 10 minutes; Add seasoning (1); Stir till well mixed; Turn to a high heat; Cook over a high heat for 2 minutes; Turn off the heat; Cool at the room temperature; Strain the sauce through a sieve into a big mixing bowl.
5. Wipe-clean beef short rib with damp kitchen paper; Arrange the rib perpendicular to the cutting board; Make a cut in the middle of the ribs; Slice down to about 6mm from the bottom of the beef and lay flat open (the meat still attached to the bone); Make another cut between the beef attached to the bone and the first cut; Turn the rib over; Starting about 2.5cm from the end, slice down to about 6mm from the bottom of the beef and lay flat open (the meat still attached to the bone); Moving away from the bone and the in the center of the cut just made, have a cut deep to the point about 6mm from the bottom (repeat the step till all the beef ribs are unfolded).
6. Cut off the roots of spring onion; Chop finely.
7. Rinse an apple; Grate.
8. Add seasoning (2), the spring onion and the apple to the mixing bowl from the step 4; Stir till well mixed.
9. Place the beef ribs in a large slider bag; Pour the marinade from the step 8 into the bag; Seal the bag; Carefully turn the meat around in the marinade; Lay the bag on its side and open one the bag a bit; Compress the bag slightly to release the air; Seal the bag again; Place the bag on a baking sheet and chill in the fridge for at least 6 hours.
10. Pre-heat the gas grill to medium heat.
11. Take the bag with the beef ribs out of the fridge; Pour the marinade into a non-stick saucepan; Bring to the boil over a high heat;
Turn to a low heat; Cook over a low heat for 8 minutes; Turn off the heat.
12. Arrange the beef ribs on the grill; Brush with the sauce from the step 11; Grill over a medium heat for 6 minutes (flip over and brush every 1 minute).
